A dual wielding rogue is really fun too. At least if you start as an archer you can switch to rogue and redo your stats if you want. Same with switching between one and two handed warrior. But a Mage is always a Mage. You can specialize later on with those classes but it's a pretty big decision. Without an aiming reticle I think long range fighting isn't as fun.
