Pick a Formation and once on the play level screen, you should be able to hit Triangle to bring up the Super Sim option.

They're just available for the 11 schools that are officially created by Nike.

For 3 of the schools, you had to share the demo.

For the other 8, you had to play their match-up in the demo to unlock.

Thanks Tommy and JB. I was hoping that it would be an editable Nike Pro Combat Uniform so that I could have the swoosh on my uniforms without having to actually upload a swoosh logo.

You have to at least play the kickoff... then simming works. It worked for me.

In the demo, on the matchup selection screen, there will be a ribbon across the corner of the picture of the matchup that says "UNLOCKED".

In addition, make sure you are online when you play the match-ups. It has to sync up to EA's servers to trigger them getting unlocked.
