I know that's hardly definitive in terms of there not being a cannon whatsoever, but it does answer the question as to what is done on a score.
And a video of a touchdown for the TCU Horned Frogs:
Hearing a foghorn/train whistle type sound effect after the score--and have heard that on multiple videos--but haven't found any footage or information to suggest that a cannon is used or present on scoring plays.

There is a long barrel modern military style cannon just outside the stadium by the main entrances. There are two actually, and I believe they were taken off an aircraft carrier. They fire after every touchdown although I am not sure if it is just one or both.
