From the Arkansas St PB Pistol Strong Slot UNDER if you wait to throw to the HB the QB will throw it overhand like a normal pass. However if you pass it to him as soon as he starts his break out of the backfield the QB will do a shovel pass.

So I've been messing around with this and have found it's pretty much any pass play to the HB where the HB is behind the QB when you pass the ball, if you want for the HB to be even or just ahead of the QB then the QB will throw the ball overhand.

Still it's a cool animation.
